Food - Cooking in a Camper
Find the best cocktails and alcholic
drinks to go with your veedub grub
When cooking in a camper we except no responsibility for
your veedub going up in flames. Cooking times may vary from recipes as
cooking whilst heavy inebriated can impair judgement and taste!
With those two small gas burners and possibly, a small
grill, trying to prepare gourmet meals in a campervan or field can be
a difficult task. With this in mind veedubbing have prepared a few recipes
that use minimal ingredients, utensils and crockery and keep washing-up
to a minimum! Although the recipes
are basic they provide tasty food with the minimal of effort.
All recipes are prepared with the following ingredients; this means
you can change the menu at the last moment! Ingredients are also long
lasting so if you don’t use them this weekend they will save for next!

Recipes
| Tomato and Chilli Bean Risotto |
| Required: |
1 tin of mixed beans, 1 tin of chopped tomatoes, 1 small
tin of pimentos cut into strips, fresh mushrooms cut into quarters
(optional), 1 large onion cut into small squares (optional), rice,
oil, black pepper, water |
| Utensils: |
2 medium sized saucepans, 2 plates or bowls, 2 forks,
1 large spoon for stirring and serving |

- Wash the rice and start cooking to packet instructions
- Put a couple of teaspoons of oil into the other saucepan and
heat over a medium/low flame, after 30 seconds or when oil is
heated add the square cut onions
- Cook for 2 minutes and then add the tins of mixed beans and
chopped tomatoes along with the pimento strips, and some pepper
- Cook for about 8 minutes and continue to stir regularly
- Drain the cooked rice and add to the tomatoes and beans along
with the mushrooms
- Cook for a further 2 minutes and serve

| Lemon & Black Pepper
Penne with Tuna |
| Required: |
penne pasta, 1 teaspoon of oil, 1 small
tin of pimentos cut into thin strips, 1 small tin of tuna, 1 small
tin of sweet-corn, lemon juice, black pepper, water |
| Utensils: |
1 large saucepan,
2 plates or bowls, 1 large spoon for stirring and serving, 2 forks,
1 knife, 1 teaspoon

- Bring a large saucepan of water to the boil
- Add a teaspoon of oil and add the Penne
- Return the water to the boil and let rapid simmer for about
12 minutes until done
- Drain the water, if you don’t have a colander or skive a plate
will do, just hold to the rim of the pan and pour away from you
whilst going steady not to burn yourself!
- Return saucepan to a low heat
- Add the Pimentos to the cooked pasta and stir well
- Add tins of Tuna and Sweetcorn and again, stir well
- Add 3 teaspoons of lemon juice (or half a fresh lemon squeezed)
and black pepper to taste, stir well and serve

| Mixed Bean Chilli with
Rice |
| Required: |
1 tin of mixed beans, 1 tin of chopped tomatoes,
mince beef (optional), 1 small tin of pimentos cut into strips, fresh
mushrooms cut into quarters (optional), 1 large onion cut into small
squares (optional), rice, oil, black pepper, water |
| Utensils: |
2 medium sized saucepans, 2 plates or bowls,
2 forks, 1 large spoon for stirring and serving |

- Wash the rice and start cooking to packet instructions
- Put a couple of teaspoons of oil into the other saucepan and
heat over a medium flame, after 30 seconds or when oil is heated
add the beef mince and square cut onions and keep stirring
- When the beef has changed colour add the tins of mixed beans
and chopped tomatoes along with the Pimento strips, and a little
pepper
- Cook for a further 5 minutes and continue to stir regularly
- Add the mushrooms and continue to cook for a further 5 minutes
ensuring food is hot all the way through
- Drain and serve rice onto plates and add the chilli beans
- Add salt & pepper to taste

| Fahita's |
| Required: |
1 Chicken breast per person, 1 red peppers,
1 onion, Packet of wraps, Jar of fahita sauce, Salsa, sour cream,
and Grated cheese |
| Utensils: |
Wooden spoon, saucepan, frying pan to heat
fahita wraps |
| |
- Chop up chicken into strips and cook
- Chop onion and red pepper and add to cooked chicken
- STOP time for a beer
- add sauce and heat through
- Warm fahita wraps in a fry pan
- couple of dollops of sauce, handful of grated cheese, spoon
some salsa and sour cream and wrap it all up
